Japanese knives are made using techniques originally developed in the manufacture of katana (samurai swords). After the United States occupied Japan following World War II, General MacArthur banned the manufacture and possession of katana. This ban prompted a large number of highly skilled craftsmen to devote their skills and attention to making kitchen knives. Although the ban was lifted after a few years, the Japanese government still limits manufacturing to a few pieces per year. Nevertheless, 1200 years later, the legacy and incomparable sharpness of the katana remains at the heart of the kitchen.
